Winemaking:

• Whole berry, destemmed
• 5 days semi-carbonic maceration
• 5-month élevage in stainless steel tank
• Unfined, unfiltered and naturally fermented with ambient yeasts
• 600 cases made
• Drink now or cellar up to 3 years
