The edifice of pure culture fermentation is a mirage. Beneath the thin veneer of this civilization lies a brutal reality. In every corner of a brewery lurk ravenous creatures prepared to devour what saccharomyces doesn’t even consider food and overthrow the established order.
State of Nature is a fruity IPA dry-hopped with Nelson Sauvin, Southern Passion and Strissel-spalt, and fermented and bottle-conditioned with saccharomyces and two strains of brettanomyces.
